Description

From the passage of Charles V through this region which is famous for trout, pike and eels, the Spanish left us with this fish preservation method. Today’s production is still very artisanal and follows the family recipe of Françoise Meulemeester: the dogfish is fried, then we add the vinegar sauce made from white wine, onions and spices. It is traditionally eaten cold with salad and chips. Their website is full of recipe ideas, such as an escabeche tart, escabeche with avocado cream and escabeche with minced endives or nuts.
